Easy Kimchi Fried Rice

Delicious way to include fermented foods to your left-over rice

  • 1 frying pan


  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 garlic clove minced
  • 1/2 cup mushrooms diced
  • 1 cup spinach
  • 1 tsp soy sauce reduced sodium
  • 1/4 cup Kimchi with juice
  • 1 cup white rice cooked
  • sesame seeds for garnish optional
  • 1 stalk of green onions thinly sliced
  • chicken, tofu, or fried egg optional


  • In a frying pan, add sesame and vegetable oil on medium heat
  • Add garlic, mushrooms, and spinach and cook for about 1 minute. Add soy sauce and stir until mushrooms have darkened in color
  • Add Kimchi and rice and stir until everything is perfectly blended. Garnish with sesame seeds and green onions. Enjoy!
  • Optional: add your favorite source of protein. I have done this recipe with a fried egg on top and it's incredible!
